I worked inside this morning…Den worked outside…watering and mowing…it is still really hot here but storms are moving in for the rest of the week.
This is in the oven…Jamie Oliver’s Eggplant Parmesan…
I really want to make this tomorrow…Spaghetti Carbonara from Damndelicious…I love that blog!
Books…finished this…kind of a Southern mystery.
Working on these…for the next few days…but one at a time…

I usually drool over the food you fix but you can keep your Eggplant Parmesan. It's not that hot here right now but it sure is muggy.

I know what you mean…I do not like eggplant but…these were different and nothing was fried. They were roasted in the oven…it was really yummy…we were both surprised! I think it's because this wa a hybrid eggplant…not bitter…thin skinned…sort of sweet!

I love anything with eggplant…and that carbonara looks so delicious I will start to drool any second!

I'm not a fan of eggplant either but it looks delicious! I need to check out Damndelicious too.

I am not sure if it was that different eggplant I used or roasting it but we really did not taste eggplant..it was amazing…and we don't like eggplant!
